mixed fermentation saison in wine barrels, and a very tasty brew, very much in line with the rest of beer perennial does like this, and of the finest quality. its got a great mix of mature bretty funk and bacterial pucker, balanced to one another and anything but generic, all fabulous with all the oak on here. a little less wine character than i was anticipating, some tannings and a mellow fruitiness and tang, but not as obviously wine barrel aged as i assumed it would be. clean and basic grain base, i taste biscuity pilsener malt and some wheat, but little else beyond that, which i think puts emphasis on the yeast here, and i have no problem with that at all. still a cultured saison yeast cleanness, ester profile, and light spice complex, and lots of funky musty brett too. way less hoppy and new school than their prism saison, more old worldy and rustic here, complex enough without the hops, and very well carbonated too. the right amount of tartness and lots of oak to balance that, a delicious and high end saison with plenty of nuance. very well done, im sure this will age extremely well, but its certainly mature and ready to drink now!

750 ml bottle. Served in a Perennial willi becher glass.
Pour is slightly cloudy darker golden yellow body with a one finger frothy white head, rings of lacing and good retention. Smell is lactic acid, light grain, musty vinous character, mineral. Flavour is remarkably similar to the foeder saison from the same brewery. It seems to be in that same vein. A bit of lemon, light mix of vinegar and acetic acid additional to the aromatics. Mouthfeel is lighter bodied, good carbonation, refreshing with a moderate lactic acidity and a bit of gruyere on the finish.
