Frances Blend #2 was brewed with a lambic inspired malt bill consisting of Pilsner and raw unmlalted wheat. Boiled for 3 hours with aged hops, and a light addition of fresh ground black pepper at the very end of the boil. Transferred into American oak barrels, it was fermented and aged entirely with the remaining yeast and bacteria from Blend #1 for 16 months prior to packaging. Conditioned naturally in bottles for 12 months. Frances Blend #2 has a sharp, yet soft acidity, paired with a presence of Brettanomyces and cheesy hops.

Nice saison. Very tart.
