Infinite Sunrise is a table strength barrel fermented saison with pineapple, fresh lime juice and Tajin. Brewed in August of 2018 with our good friends Casa Agria Specialty Ales, it was fermented and aged in wine barrels for 11 months before being conditioned on pineapple purée where it was let to ferment for an additional 6 wks. Finally finished on Tajin & fresh lime juice, it’s been conditioning in bottles since Sept of 2019. This beer reminds us of camps after Live@5:45, freshly Tajin dusted pineapple cubes and a weird pineapple Bloody Mary.

This one pours a semi hazy golden orange color, with a small head, and a little bit of lacing.
This smells like caramelized pineapple, oak, white wine, lemony acidity, and a tart and zesty spice character.
Tajin is a cool idea to add to a fruited wild ale, and it works well here, adding a zesty, slightly spicy lime-like funkiness to this beer. There’s a sweet pineapple character, with just a hint of lemony white wine barrel.
This is lighter bodied, with a very manageable acidity, and a nice drinkability.
This is a unique and welcome take on the style, when so many end up tasting the same.

Hazy burnt yet still bright yellow, topped by a very short white head that quickly settles in lumps to a thin ring.
This exhibits huge pineapple up front, yet without the sweetness. Also right at the beginning is an oaky barnyard funk that is made more noticeable on the nose when next to Giant Steps 3. Digging further in, a touch of cracker and toasted seeds crop up right around the middle.
The medium body has a fizzy froth and finishes semi-dry with a somewhat sharp acidity.
