Next up in Prism, our series of Dry Hopped Saison features a blend of Centennial and Hallertau Blanc. Using the same grist as previous batches, the flaked wheat give a touch of heft to a beer that finishes very dry. The dry hop is a 50/50 split between American grown Centennial and German grown Huell Melon. Drinking this beer reminds us of indoor grown red Fruit Stripe gum, the picturesque countryside of Belgium, and standing in the Coca-Cola Cool Zone at Six Flags.

16oz can purchased from the fridge as a single from a local bottle shop for $4.25. Says Best By 02/05/2022. We are well past that date, and that's okay.

Look: Pours a light color with a very faint haze. The beer wanted to come out fast as soon as I opened it. A huge, very rocky white head has basically reduced to almost nothing. There is a steady stream of fine bubbles rising from the glass.

Smell: Very nice aromas. Combination of juicy, almost tart, aromas with floral, herbal, spicy, and dank notes. I also get this really nice Juicy Fruit gum aroma. Also notes of melon and grassy/earthy notes.

Taste: Very crushable. This is really delicious. It's really light on the palate. Up front, there's lots of citrus notes - lemony and grassy. The finish is very dry and moderately bitter with a lot of pithiness coming through, especially after adding the rest of the can. This is very refreshing and super easy to drink. It's a very nice combination of German and American dry-hopping with a light-bodied, crisp Saison.

Feel: The mouthfeel is light and crisp. Nicely carbonated.

Overall: It's been a while since I had a Perennial beer. I really like this one. I would buy this again.

From the can:
Using a simple grist and a favorite Belgian yeast strain, Prism is an ongoing series showcasing different hop varietals. Floral, herbal, grassy and a touch of citrus meld with a crisp malt bill supported by a touch of Flaked Wheat for depth.

Got in an IP trade with hoptheology. 16 ounce can into tulip glass, best before 1/22/2022. Pours lightly hazy/cloudy pale golden yellow color with a 2 finger fairly dense and fluffy white head with good retention, that reduces to a small cap that lingers. Nice spotty foamy lacing and streaming carbonation on the glass. Aromas and flavors of big lemongrass, white grape/wine, red apple, pear, melon, berries, red grapefruit, orange, cedar, mint, peppercorn, clove, light banana, pine, wheat, cracker, hay, straw, elderflower, herbal, grass, and yeast funk/earthiness. Moderate pepper/clove spiciness; and pine, woody, herbal, grassy bitterness on the finish. High carbonation, light-medium body, and crisp/clean finishing. Balanced bready/grainy wheat and sticky hops in the mouthfeel. Slight lingering resins. Minimal warming 5.5%. Minimal residual sweetness with crisp dryness. Very refreshing and flavorful. A spot on saison all around. Awesome balance between the yeast and the hop character. Will have to seek out other cans locally. Jared got it in Charlotte after all.

16 oz can, best by 1/22/22, into Ellipsis trophy glass.

Chill hazed blonde with a fluffy finger of head that recedes gradually to a mass of white head layering the top with scattered skirted lacing around the glass.

Aroma is bright, grassy, vegetal, and slightly fruity with notes of pepper, melon, tangerine, flowers, clove, and juicy red grapefruit. Very nice.

Flavor is mostly grassy hop leaves with hints of clove and pepper underneath. Some lemon pepper. Lingering notes of pepper and grass remain. Doesn't quite translate.

Feel is carbonated, wet, slightly slick, with some resins at the finish. No alcohol.

Overall, an okay Prism but definitely not as good as their others. Maybe shoulda gone with a single instead. I like this one a little better than Loral Cryo and that was their worst one. I wish they'd do more of them with Mosaic!!

16oz can. Poured out a clear, golden yellow color with a small, off-white head of foam. It left some thin lacing on the glass. It smelled funky with caramel, crackers, sweet fruits and yeastiness. Nice subtle spiciness with a funky kick. Sweet caramel with a hint of bitter.
