This 100% barrel-fermented saison is a blend of two unique barrel projects. First, a 2 year-old blonde beer created with a yeast blend sourced from my grandparents’ farm. Second, a saison aged 11 months in wine barrels, which was brewed with hibiscus that came from our Florida friends at Tripping Animals Brewing Co. and fermented with 2 different house yeast strains. The only hops that touched this beer were aged over 10 years, supplying the perfect condition for the yeast.
After their rest in oak, I blended everything in stainless on 420 pounds of dragonfruit. Package-conditioned for 9 months, this bad boy is finally ready. Coming in at 4.20%, this tropical pink heater smells more acidic than it tastes, with a hibiscus floral note that rounds out the edges.
