Blend of 3 stout bases aged in whiskey barrels with marshmallows, graham cracker crumbs and cacao nibs
BA Then You Roast The Mallow is a complex blend of 3 different stout bases aged for 14-17 months in a variety of barrels before being conditioned on marshmallows, graham cracker crumbs, and cacao nibs. 50% Maman base brewed in September of 2020 and aged in Heaven Hill, Buffalo Trace, and Wild Turkey barrels, 37.5% is our Black is Beautiful base brewed in July of 2020 aged in Weller and Blantons barrels, and the final 12.5% is a new wheated stout base brewed in July 2020 aged in Old Fitzgerald barrels. Rich aromas of freshly melted ganache and burnt marshmallow are followed by a rich but balanced palate of roast malt, oak, and chocolate cake icing.

750ml waxed and capped bottle into a Side Project snifter. Really appreciate these pull tabs.
Pours a super dense, pitch black motor oil. Thick mocha legs. No head, no lace. Clear marshmallow in the nose. Sugary, creamy, chocolate, fudge, and cocoa powder. Very aromatic. Deep and rich. Beer opens chocolate, molasses, cane sugar, and sweet cream. A nice roastiness provides a bit of balance from the overwhelming sweetness. More molasses and vanilla in the middle. Syrup, some dried dark fruit, and more chocolate at the finish. Body is full with low carbonation. Thick and chewy on the palate and goes down thick and messy with a long, lingering aftertaste.
This one's a touch too sweet for me but the body is near perfect.

Syrup, some dried dark fruit, and more chocolate at the finish. Body is full with low carbonation. Thick and chewy on the palate and goes down thick and messy with a long, lingering aftertaste.
This one's a touch too sweet for me but the body is near perfect.

Poured from the bottle onto a small stout taster
L: pours a nicely thick, dark black brown with a moderate dark brown head that fades after a several seconds. No visible carbonation but nice bit of foam around the edge. Stain the glass nicely with each sip
S: huge, excellent chocolate-forward nose. Big waves of fudge brownie batter, vanilla, honey, caramel. There’s some dark fruit lurking in the back, but mostly rich sweets
T: follows the nose well, lots of rich melted chocolate with a bit of a roasty note and some pleasant bitterness to the finish. Beyond healthy amounts of chocolate I get a nice bit of marshmallow/graham cracker sweetness toward the finish. There’s some nice heat in the middle, doesn’t become overpowering and think it works quite well
F: medium+ body, medium- carbonation. Quite smooth, very drinkable, coats the mouth nicely but isn’t overly viscous
O: pretty pleased with this! It’s nothing earth shattering but delivers exactly what I anticipated in a tight package - which is frankly worth celebrating vs. some other BA stouts these days
