Elliot Blend #2 is comprised of relatively younger barrel stock of various sizes.
35% five month old barrique fermented saison, 35% honey saison aged in a large format foedre, and 30% one year old puncheon fermented + aged spontaneous beer. Racked out of oak and into stainless on orange blossom honey, grapefruit, and our house Brettanomyces - where it continued to age for five months.
