In this special blend, we used 40% 2 years old lambic that fermented and matured for 2 years in freshly emptied Cognac barrels. 30% 1 year old lambic and 30% 3 years old lambic were used in the blend to bring freshness and

Cellared a year. Cloudy orange body, white cap. Aromas of stone fruit, lemon, and barnyard funk lead the nose with supporting apple, pear, wild yeast and vintage oak with emerging hints of orange, white grape, golden raisin, minerals. Taste has big peach and bright barrel adding to usual lemon, pear, barnyard funk, wild yeast I have come to expect. Feel is bright and equally tart and funky, maybe a touch more tart as it warms, but this is refined. Excellent gueuze! Paired perfectly with foie gras

Bottle: Poured a golden color lambic with a medium size white foamy head with OK retention and some minor lacing. Aroma of tart notes with some funky esther and oak notes. Taste is also a mix of tart notes, funky ester with some green apple notes and some oak with very faint notes of Cognac. Body is about average with good carbonation. Enjoyable lambic but the Cognac notes are too faint.

Pours a fizzy foamy decent head covering with fair retention, more head than expected for a gueuze, a bit of lacing, semi clear golden orange color
Nose has some nice barnyard funk and souring bacteria, barnyard wet hay, acetic acid, general tart funky fruit, a touch of vanilla and barrel notes, little earthy farmhouse barn floor, some berry and apple notes
Taste brings more funk, barnyard funk and farmhouse barn floor again, souring bacteria with acetic acid, maybe some creamy lacto as well, a bit of citrus with some grapefruit notes, zest, a bit more berry like fruit and apple, a flash of apple brandy cognac like with a little vanilla oak, vanilla-lemon yogurt, a little bitter citrus rind, mild flemmy tart finish
Mouth is med to a bit lighter bod, high effervescent carb
Overall great as usual, not much of the cognac but enough to get hints of it and get a bit of barrel rounding, lots of good funk

Deep saturated orange, two fingers of foam that settles to a fine veil, spotty lacing all around.
Musty wet barrel aroma, preserved lemon, peripheral dried herbs, cognac richness, mild salinity.
Tart lemon and grapefruit, moderate acidity, spritzy carb, nice minerality. Medium bodied, easy drinking. Finishes dry with light lingering barrel tannin. Cognac character is present but not heavy, it dovetails nicely with the base gueuze blend. Very nice!

Pale yellow cloudy appearance with a loose white head that recedes slowly to a soft lingering surface film. Lemon, young funk, oak, and cognac beginning to end. Moderate carbonation and mouthfeel.
