A - An almost black beer with some ruby highlights on the edges. Large beige head had some decent retention that faded to an uneven cap with big splotches on the sides.
S - Touch of molasses, good amount of dark fruits, slight licorice. Malt backbone is a bit toasted and provides some balance.
T - Tastes a lot like it smells, with the molasses being more complimentary than a highlight of the beer. Little bit of drying bitterness on the end. I actually get something that tastes something like melons in this for an interesting taste.
M - Smooth, creamy, moderate carbonation.
O - Highly drinkable, I finished off the glass without even realizing it. Taste is not bad, although not particularly special. Still, this is a solid beer.

On tap at City Provisions... Collaboration with Cleetus Friedman, brewed with blackstrap molasses. Greenbush's first commercially available beer in Chicago, after several appearances at special events.
Dark russet brown with reddish highlights, not fully opaque, it reflects the light a little bit. Molasses tinged tan foam, slightly darker shade. A delicate crown of spindly cobweb lace forms around the rim of the tulip glass, and concentric rings all the way down. Creamy texture to the foam, head recedes slowly.
Earthy aroma, nutty toasted malts, milled barley, molasses richness, not sweet.
Fairly dry and bitter in the finish, earthy roast malts upfront. Noticeable raw molasses, unsweetened chocolate, an almost woody quality about it. Charred, caramelized creme brulee crust. Mellow and medium bodied, somewhat robust flavors. Moderate hoppiness that lends a distinct earthy pine bitterness. Pretty drinkable, had a second glass which is a telltale sign... and if this is a sign of things to come, Greenbush is definitely one to watch.
