12oz bottled 05-02-25 poured into a tulip glass at fridge temp 5.8% ABV. The beer pours mostly bright golden amber with off white head. The head recedes to an uneven ring and leaves a little lacing. The aroma is moderate in strength featuring clove, banana, and sweet malt. The taste is semisweet pale/caramel malt with more clove, hay, and honey before medium, lasting bitterness. The feel is medium bodied with average carbonation and a mostly dry finish. Overall, very good saison.

Pours a decent fizzy frothy 1/2 finger head with moderate retention, fair lacing, clear golden straw color
Nose is nice, grainy malts, cereal, straw, possibly wheat, lemongrass, a bit of citrus, bright floral spices from the phenols, a bit of bubblegum notes and other fruity esters, light floral spicy hops
Taste brings some malts in there, not a lot but enough for a good base, cereal grain, straw, a bit doughy maybe wheaty too, cracked wheat cracker, into mild grassy herbal hops as well as citrus, lemongrass again, lemon-lime zest, other fruity esters that blend into the background, a bit of bubblegum again, more of the floral phenolic spices, and flowery character, drier finish, hops get a bit spicy and increase the bitterness a bit
Mouth is med to lighter bod, higher slight effervescent carb
Overall pretty good saison, nice and enjoyable for a summer day, good base malt, great yeast additions in the esters and phenols, nice hops that accentuate the rest of the beer

Poured from a bottle into a tulip glass
Appearance – The beer pours a light golden amber color with a one finger head of white foam. The head has a decent level of retention, with it fading over time and a bit of foamy lace on the sides of the glass.
Smell – The aroma is quite strong of a grainy smell mixed with a good showing of clove and some coriander. Along with these aromas comes a touch of funk and some yeast along with a good presence of hay and a bit of wheat and light fruits of apple, pear, and peach.
Taste – The taste starts out with a slightly bready and grainy flavor mixed with the yeast and the coriander/clove that was in the nose. These flavors create a strong base for the flavor profile acting as the anchor throughout. Upfront there is a bit of sweetness with some of the apricot and pear that were in the nose being on the tongue. As the taste marches forward however, the sweet fruits fade, giving way to more spice and a light funk. At the end there is a burst of hay and some grass, leaving one with a moderately yeasty and lightly funked taste to linger on the tongue.
Mouthfeel – The body is a little thicker for a saison of 5.8 % abv with a moderate carbonation level. For the style and the tastes a thinner and crisper body and carbonation would have been better for accenting the flavors of the brew while making it easier drinking.
Overall - A decent saison overall, but I was hoping for a bit more from FFF.

Brewed and bottled by Three Floyds Brewing LLC, Munster, Indiana.
Appearance: Poured entire bottle into a large tulip glass, yielding a golden tan crystal clear base, medium plus sustained carbonation throughout, a creamy bubbly head that leaves without a trace beyond a creamy rim above the base, and a razor thin cover above most of the circumference. Very nice! 4.25
Aroma: Banana, clove, citrus, lemon. Minimal funk, medium strength, slightly higher enjoyment.. 3.75
Taste: Stronger more intense flavor than the aroma yields, clove and citrus carrying heavy freight, with traces of banana and lemon. Could have used some funk. 3.5
Mouthfeel: Sustained prickly carbonation is the first sensation. Drinks light and easy, dry and carbonation is the primary contributor to the light watery body. Sweet, the citrus and clove sustained from start to finish. 3.25
Overall: The heavy carbonation was personally distracting, combined with the lack of funk made this a meh one time saison for me., though based on my prior experiences would give them another Saison shot down the road. Enjoying what I can, and pairing with fish. 3.25

Banana, mild clove & mild orange peel notes in the nose.
Medium mouthfeel.
Banana & mild caramel flavors up front; faint clove notes on the finish.
Smelled a touch more interesting than it tasted, but overall strong Saison vibes here.

With all of the imagine of today's craft brewer, its often times hard to stay within the confines of beer styles, especially the classic styles. But 3 Floyds shows tremendous maturity and restraint in making a rather traditional tasting farmhouse ale.
Pouring a deep and hazy straw, the bubbly Oceans of Time builds an tall arid white froth that precedes a fruity, spicy and grassy scent. Gentle sweetness bounces off the tongue with a dry malt substrate and only hints of bread and light honey. A fruit forward middle palate carries an ester profile of pear, lemon, apple and grape, only to be upstaged by a spice forward yeastiness of white pepper, coriander, clove and vinous-type spice. Hopped for extra measure, the late taste turns grassy, peppery and dryly resinous.
Medium bodied and trending dry, the Saison is near-classic and a welcomed taste for the warmer days to come.

Very clear yellow to amber in color. Very bubbly white head. Nose seems like pears to me. Taste has a pineapple and pear flavor with a white pepper finish.

Not my favorite but I'm glad it's not a IPA. Super drinkable.
