Bottle Inspection: Green 750 ml bottle with a hang tag listing that this is in celebration of NXNWs 500th brew. 6% abv.
Aroma: Spicy and slightly sour with a shovel full of earthiness. Mild old hops and hay are also in there. Hard to pin the spicy note, peppery, but more. Thyme? Lavender?
Appearance: Clear golden glass (fine layer of sediment in the bottle carefully held back) never really manages to hold a head, but a few spots of white. No lace.
Flavor: Mild farm elements, sour hay is about right, mild sweetness tempered with spicy rather than hoppy elements. Interesting and well used spices dont overpower. Im thinking a lot of the flavor elements here are yeast driven, good Belgian stock.
Mouthfeel: Light slick body, just enough carbonation to be lively but still low, dryish slightly puckering finish.
Overall Impression: Paired with my Thanksgiving turkey dinner, and it did well. A suitable celebration of NXNWs continued excellent representation of the Texas beer scene.

Aroma: Earthy, with sharp old cheese, and sour hay, quite authentic for the style.
Taste: Opens with a wave of cloves and coriander. Midway through the taste some herbal hop bitterness appears, as well as a sharp and distinct earthy note. The malt backbone, while somewhat obscured by a cacophony of over-the-top rustic notes, manages to provide a solid mildly tart foundation throughout the taste. Finishes with a rather lingering metallic and herbal hop note.
Drinkability/notes: A rather nice example, with all of the delightful idiosyncrasies of a Belgian-brewed Saison.
