another increidble beer from these guys, from unknown to one of my new favorites all in one introduction! how are these guys not getting more attention for beers like this?! this one is a lightly tart saison aged in oak on second use cherries that were previously used in one of their spontaneous brews. i love the second use fruit thing, made known to me by jester king in the most complete sense, but many employ this technique now. the fruit is real subtle here, no color imparted hardly at all, this is more straw colored, lightly hazy, and fizzy from the bottle with the sexy label. the nose and taste are tangy, lightly tannic, a bit woody, and complex on the fermentation side without being fully wild, maybe a mixed fermentation thing, maybe the cherries still had some of the wild capture stuff working, i dont get much classic saison yeast, although there is a light spiciness to this, a pear and white wine note, and there is cool balance too, plenty of wheat malt coming through, and nice structure from it. subtle stone fruit, white pepper, wet paper, and oak. jovial carbonation, light tang but not particularly acidic, a cherry candy thing at the end, dry the whole way though, maybe a hint medicinal, and almost seems like it has a little blast of lambic blended in, pretty complex albeit subtle too. well refined, unique, rustic, and delicious. put these guys on the map! i need more from them!
