Our experimental IPA series is constantly evolving. The first several batches will have a very light malt base with a touch of rye. The hop profile will change significantly with each iteration.

Smell is piney and hoppy. Taste is just like the smell, very piney and hoppy. Very delicious. Only issue is that I wish it was more carbonated.

Simcoe variation

Tap at Monkey Paw. Blond with a white cap. Nose full of Simcoe. Spicy grapefruit with some pine . Not much sweetness. A little crackery malt. Lightly sweet flavor with biscuit and dominant grapefruit. An interesting lingering tangibles. Dry finish and high carbonation. More bitter than expected
