Inside Our DNA is a reminder to New Jersey’s brewing progeny of our deep and proud roots: a straight tribute to the first American IPA. We applied what we’ve learned of modern brewing to respectfully pull the classic into today. A traditional grain bill fermented with Newark’s yeast, stolen back from the West Coast. The resulting beer was aged on oak, then late addition hopped with a distillation of oils from Bullion hops. Have it right now or years from now; it’s as tenacious as the brewers of Newark that inspired it. Either way, drink Inside Our DNA, and remember where you come from, son.

Canned on 8/16/2018. Poured into Carton pint glass. It pours a cloudy, orange-brown color with a large, fluffy, long-lasting snow white cap and thick, soapy lacing. Its primary smells are sweet malt, caramel, and oak. There's almost no fruit or hops on the nose. It has the taste of a Barleywine with lots of sweet malt, caramel, and oak. After the initial taste, as you swish in in the mouth there is a wash of bitter Bullion hops and quite a bit of spice that balances the sweetness very well. There's a certain oily quality to the taste (in a good way!). This ale features a rich, thick, chewy mouth feel with moderate carbonation, and I'm glad the ABV is kept to a manageable 6.6% While this drinks like a "big" IPA, given Carton's goal of emulating IPAs brewed in Newark, a higher ABV would be distracting. Overall, this is a superb beer, the whole of which exceeds the sum of its parts. Augie Carton advises that Inside Our DNA is appropriate for aging and I plan to keep a few cans for awhile and see how they evolve. This is a fitting 7th Anniversary beer from a quality, always adventuresome, brewer. Cheers to the Brick City!

Excited to be first reviewer of this best of Carton heritage brew. Indeed Newark was the brew capital of the nation before St Louis or Milwaukee (or San Diego). NJ strikes back with a #brandnewj.
A) dark, oaky mostly clear body with mid size off white head that lasts and laces.
S) OAk first, oily, hempy hop, slight dankness. Not fruit, but wood.
T) Follows the smell. If you like oaky, church-like brews, and oaky wine this is yours.
F) Oily serious thick meditation beer. I’m buying and aging.
O) Carton builds another original. This is a collector item.
