Using the stuff around them, Carton brewers take the same indigenous mindset as Belgian brewers did hundreds of years ago and make a truly authentic Lambic-inspired sour Jersey ale.
Pale and translucent golden, Blossom billows to the brim with a spirited froth and a funky floral scent that pits the essence of citrus and fresh flower pedals against that of weathered woods, saddle leather and general cellar-like conditions. A gentle sweetness of wafer, raw grain and whole wheat provides a light creaminess to the early palate.
Then the fun begins as the sourness pushes the grain into the recesses of taste, supplanting it with a fruity middle palate of grapefruit, branch dried orange, lime, lemon and gooseberry provide a fruity sourness laced with white wine and cider vinegar nuances. Oak, hay and and cork rise in its late palate in a spicy bitterness and a gamey, peppery musk.
Medium light in body, the beer trends slightly more sour than funky in a drying and piquant sourness that prickles the tongue gently with ether and acidity. A quick finish of fruit rinds trails with echoes of dried attic woods and brine.

everyone was talking about Blossom release today 7-14 at brewer. And it was even better on 7/17.
I enjoyed it after the re-release of Dune Fruit which was 1 tiny notch better, cleaner.
That said this hybrid is excellent and just what a post-kayak summer evening ordered.
a) Light golden energetic clear body, sports a loose saison head and spots of lace.
s) Wild yeast indeed, fresh local harvest.
t) Saison dominates, Lemony, limey with funky, hemp-like, wet flowers, salt water PFDs now dried in the sun - nuances.
f) Bright, crisp, refreshing, inviting conversation and another.
