Each year is significant for a small business, and over time trends are realized. Our eighth year had a lot in common with our first, moving into our new space and brewing uniquely Jersey beers on a “big system.” As we celebrated our first big year with SS 2012, we looked to the future with a grander tweak of our Boat Beer. At this point we lean into Bigger Boats as uniquely Jersey Double IPA. Our water and Kolsch yeast, over a generous wheat-addition, create the modern doubles that remember a quintessential New Jersey truth. Beauty is because of, not in spite of, things like a little bit of acidity, a little bitterness, a little saltiness and a little tension. SS 2019 asserts that perspective, this time adding Zythos and Ekuanot to layer notes of pineapple and lime on Boat’s bitter citrus hop bill. Drink SS 2019 because you don’t turn 8 every year.

A: Mustard yellow. White foam cap.

S: Pineapple and tangerine. Sweetness is subdued and subtle with tart red berries, bayberry and green holly.

M: Smoothing creaminess to match the slight alcohol at the end. Like an icy-hot in all the right ways. Med-full bodied.

T: Big papaya, lime pie, fresh cracked spice of pepper, zestar apples, and orange peel. Lots of earthiness, forwarded by sumac and grass.

Pours a deep opaque golden/apricot color with a nice creamy/foamy head. First smell I picked up was lime,fresh baguette,fresh earth,piny,grass notes. Taste is somewhat bitter,lime presence made known,as well as pineapple. Feel acidic fruit tastes are eventually balanced out by a nice Malt bill. Medium body,juicy finish. The wheat makes it a bit fluffier. Feels like some extremes that come together harmoniously. Nice Job !

Carton's 8th Anniversary release. Canned on 8/15/2019. Poured into a Spiegelau IPA glass. It pours a cloudy, bright orange color with a large, fluffy, eggshell-colored head and thick, soapy lacing. The nose is fruity and semi-tropical with lime and grapefruit. There are also notes of wheat cracker and the smell of the Kolsch yeast that Carton likes to use. The taste opens with a blend of dry lime, bitter lemon, pineapple, and wheat cracker. It has a solid malty base that's nicely balanced by the citrus. It has the same hoppy bitterness as Boat. To me it seems more bitter than 60 IBU. It features a creamy mouth feel with pleasant carbonation, and the 8.4% ABV gives it nice substance. Overall, this DIPA is more than just a bigger version of Boat. The lime and pineapple tastes are a nice twist. This is fine offering that needs no comparison to little brother.
