Wild doesn't just stop at its fermentation character if you're the brewers of Carton. Reaching into the garden and pulling out beets and dill, and suddenly "wild" has a whole new meaning. Piled high on a rustic and sour base beer, let the curiosity and surprises commence.

Pouring a bright mauve color, the hazy Vild Bits floats a pillow of stark white sea foam. Fruity, floral and funky, the nose is chocked full of red berry aromas with a peppery, earthy and a nearly smokey twinge. Gentle wafer sweetness skirts across the early palate with the mildness of rose water, light agave and lychee.

As the sweetness fades on the middle palate, its the brisk tartness that develops into a moderate tartness that captures the taste of hibiscus, strawberry, cranberry, dragon fruit and a light rose wine balance. Light hopping rates trend citrusy with lemongrass, grapefruit peel and passionfruit in a tropical twist. A late palate of pepper, licorice and peat result in a spicy taste that's nearly linoleum-like.

Medium bodied and moderate in its tartness, a malty dry taste allows for a thinning action to occur after the carbonation subsides. A short after palate of rouge berries, cider and cellar-like conditions skirt just under the peppery dill and the earthen beet sweetness.

1st review. Wild is a happy place for Carton, and since I live in town, a happy place for me, because you want to savor while fresh and new.
a) Beet evident in the red color, mostly clear, thin headed pink brew body. Extra points for natural pink color.
s) Sour deserves some fall veg, and gets it year where the beet sugar plays with the beet dirt, battle perfumery with mud.
t) Follows the lovely transitioning taste see saw from sweet beet and perfume to deep wet fall earth, grass, yeast, orchard, all brightened by the dill. This genius combination rivals Context 1.
f) fizzy, yeasty, light.
o) To not be missed, to savor and favor.
