In creating Chekhov's Gun, we brewed a Quadruple Ale in mid-spring and fermented it using Lallemand's Abbaye Ale yeast. The additional fermentables needed to reach our target ABV of 15% were achieved with the addition of Pomegranate Molasses during the boil. After a little over 2 weeks of primary fermentation, the beer was racked into 4 Peach Brandy barrels. After continuously tasting each for almost 8 months, the maturation of two of the barrels blended at the ratios below yielded the balance we were seeking. Drink Chekhov's Gun because everything here has a purpose.
1 part: Barrel #2 - Strong Brandy notes present
3 parts: Barrel #3 - Heavy wood flavors and more noticeable peach characteristics

a) Call a driver, this dark body going to carry you away, the abv kills the carb and the head, muddy cola dark.
s/ t ) Complex. Conversational sipper. Wood, incense, church pew, peat, woodsmoke, wood shop, fresh burned naked wood, yeast, sweet malt.
f) Fine port, sherry like feel.
o) A first, how rare is a first in craft world?
