Praxis I is a project years in the making. Blending 12 month and 30 month foeder-aged mixed ferment sours conditioned on New Jersey grown cherries, the goal was to emulate the iconic lambic style Kriek. Over the course of nearly 3 years, it has been meticulously monitored and sampled, waiting for those complex and desirable flavors to develop.
