The first stride on this path was enough Super Galena in the middle of the boil leading a strawberry hop tone in vanilla and chocolate malt notes creating a Baltic Porter with a different gait. The move to “let’s throw some Neapolitan ice cream in there and see what happens” isn’t a giant leap. Going from a big bold porter with chocolate vanilla and strawberry freeze dried ice cream to “brandied walnuts and a cherry on top, right?” is actually a small step. Sundae is Cosmonaut put down in cognac barrels with maraschino cherries and walnuts for a year. Drink Sundae cause this one’s for you, Mr. Gorsky.

Historically, the Baltic seafaring journeys were treacherous ones. Now if they were more like Carton Brewing, they would have brought along some Neapolitan sundaes too to brighten those tougher days.
Very dark brown and even competing with stout appearances, Sundae releases a fast-dissolving, mocha brown froth along with a bold and roasty scent laced with dark and vinous fruits, berry, cocoa and cream. As its dark and savory sweetness creeps onto the tastebuds, elements of blackstrap molasses, bittersweet chocolate and burnt cream come to mind immediately.
And as that robust sweetness nestles onto the middle palate, the roasty and toasty flavors of french-press coffee, roasted walnut and cocoa start to invite secondary flavors of strawberries in a more natural way. That, coupled with the natural fruitiness of grilled blueberry, blackberry and currant from the Baltic porter base falvors dovetail seamlessly and give the dark ale a slightly vinous late taste, remiss of sherry and masala.
Full bodied, sweet and yet on a drying trek, Sundae finishes malty-dry and with coffee-like bitterness that ensures a high rate of palatabiliy despite its imperial strength.

Super dark like a stout. Nose is chocolate and cherry and boozy. Head was darker tan, frothy that gave way to just a ring around the top of pour. Taste is very much like a neapolitan ice cream. Chocolate, strawberry, cherry, lots of flavors meld together. Well done
