Introducing Will It Melba?, our latest foray into the world of pastry cream ales—a tribute to the flavors of the classic Peach Melba dessert, with a twist. At 10% ABV, this indulgent cream ale marries the essence of ripe peaches, vibrant raspberries, and rich vanilla, inviting both food lovers and craft beer enthusiasts to explore the interplay of dessert and drink in one glass.

Just as Escoffier perfected the harmony between poached peaches and tangy raspberry purée in his celebrated dessert, Will It Melba? captures that delicate balance in beer form. Each sip begins with the sun-soaked sweetness of ripe peach, softly rounded by the creamy body of the ale. The mid-palate brightens with a punch of raspberry’s tartness, cutting through the sweetness with a lively, mouth-puckering edge. Finally, the smooth, comforting richness of vanilla, gives it that unmistakable pastry finish—a nod to the vanilla ice cream traditionally served in the original dessert.

On tap at Carton

Yet again I end up back at Carton during a trip to New Jersey. It’s always fun to try their Cream Ales, and this sounds like one of the most exciting ones yet. I had a beer awhile back that was trying to emulate melba and I remember it being quite good so I have pretty high hopes for this one. Let’s dive right in

Pours a cloudy orange gold with 3 fingers of frothy white head that slowly fades to a thin cap and leaves nice lacing

The peach really dominates the nose, though the raspberries provide a much needed tartness. I’m picking up on aromas of overripe peach, brown sugar, vanilla bean, cinnamon, raspberry, light honey, and bread crust

There’s a slight metallic tang in taste unfortunately but this is still pretty solid regardless. On the front end of the sip I’m tasting jammy peach, vanilla bean, raspberry, brown sugar, lemon zest, and brown bread. The swallow brings notes of overripe peach, tart raspberry, coriander, earthy hops, vanilla bean, and a touch of iron

A medium body pairs with gentle carbonation, resulting in a creamy beer. Finishes a tad sticky but dries out over time

Despite my excitement this one was just okay. They have far better pastry Cream Ales but I’m still happy to have tried this
