An Imperial Stout Aged for 3 years in 4 Roses Bourbon Barrels, then blended with Vermont Maple Syrup. This project was a nod to Sean Lawson, our friend who started Lawson’s Finest Liquids.

On tap at Carton
Ending my trip to Carton, we have a a maple Stout, perhaps my biggest weakness in beer. A tribute to Sean Lawson, this one is sure to be good. Let’s dive right in
Pours completely pitch black with a finger of creamy dark tan head that quickly fades to a ring and leaves minimal lacing
The maple is up front and quite sharp in the nose, punchy yet balanced. I’m picking up on aromas of maple syrup, vanilla bean, dark chocolate, Belgian waffle, sea salt, oak, molasses, black cherry, creme brûlée, and dark toast
It’s even brighter in taste, really amplifying the fruity undertones found in the aroma. On the front end of the sip I’m tasting maple syrup, milk chocolate, vanilla bean, black cherry, burnt caramel, apple skin, sweet bourbon, toasted oak, and light raisin. The swallow brings notes of black cherry, blueberry skin, earthy bourbon, sharp oak, red grape, molasses, burnt toast, acidic coffee, raisin, and vanilla bean
A medium full body pairs with gentle carbonation, resulting in a smooth beer. Finishes a tad sticky but the roasty bitterness helps it along
It’s not in the upper echelon of maple Stouts, but it’s a damn good beer either way
