A golden ale soured with lactobacillus and fermented with two brettanomyces strains then aged for 12 months in an American oak foeder with Pajaro Valley Apricots. Golden head with aromas of fresh apricots along with a tartness up front followed by mild flavors of tangerine, honeysuckle and floral notes. Finish is crisp and dry with its high acidity. Bottle conditioned with SweetWater’s house brettanomyces.

Had The Pit & The Pendulum Apricot poured from 12.7-oz. corked-and-caged bottle, label printed "Date Bottled: 5/18/2018," purchased at the SweetWater Brewery Taproom, into Teku tulip 3.0.

This beer is tart then fruit and funk in the aroma, and all tart fruit in the flavor, after a moment's straight fruit to start, leading to a biting finish, there being no evidence of malt anywhere and only a little noble hop presence in the aroma.

Poured from a cork'n'cage bottle into a Dogfish Head tulip

L: Nearly clear light golden orange pour with thin fizzy white head. Modest ring of lacing.

S: Tart and funky. Green fruit and vinegar.

T.F: Tart... apricot/peach and green fruits mixed with lemon citrus and funk. Moderate acidity... vinegar and unripened stone fruit. Oak and white wine. Well carbonated... bubbly. Medium bodied with lingering fruit and funk.

O: A well executed wild ale. Tart but drinkable... and the 'Pit & Pendulum' series is the best that Sweetwater has yet released.

Poured from bottle with little to no head. Golden with a tint of orange color. The look of an apricot. Taste is very tart with a medium body feel. Definitely has the hint of apricot. Carbonation was high, very much like champagne. Feels great on the tongue. I cannot get any strong aromas. Refreshing and tart. Great for a hot summer day.
