500 ml bottle into tulip glass, bottled on 11/14/2017. Pours slightly hazy pale golden yellow color with a 1-2 finger fairly dense and fluffy white head with solid retention, that reduces to a minimal spotty lace cap that lingers. Minimal spotty lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big tart/sour lemon, lime, peach, pear, pineapple, melon, red/green apple, white grape/wine, oak, peppercorn, hay, straw, floral, and grass; with lighter notes of wheat, cracker, white bread, leathery/musty funk, white wine vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic/spicy yeast, oak barrels, and light-moderate pale/wheat malt notes; with great strength. Taste of big tart/sour lemon, lime, peach, pear, pineapple, melon, red/green apple, white grape/wine, oak, peppercorn, hay, straw, floral, and grass; with lighter notes of wheat, cracker, white bread, leathery/musty funk, white wine vinegar, and yeast/oak earthiness. Touch of oaken vanilla. Light-moderate lactic tartness, peppery Brett spiciness; and light wine tang in the mouthfeel. Lingering notes of tart/sour lemon, lime, peach, pear, pineapple, melon, red/green apple, white grape/wine, oak, peppercorn, hay, straw, floral, grass, wheat, cracker, white bread, light leather/funk/vinegar, and yeast/oak earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, oak barrels, and light-moderate pale/wheat malt flavors; with a great malt/tart/spiciness balance, and no puckering flavors after the finish. Moderate increasing dryness for tart/spiciness, tangy oak, and carbonation. Medium-plus carbonation and light-medium body; with a very smooth, moderately grainy/acidic/tangy/tannic, and fairly crisp balanced mouthfeel that is great. Minimal warming alcohol for 8.9%. Overall this is an awesome sour/wild saison. All around great complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, oak barrels, and light-moderate pale/wheat malt flavors; very smooth, easy, and fairly crisp to drink; with the mellowly acidic/tangy/tannic/drying finish, not overly lactic. Awesomely well rounded Brett/bacteria complexity, nice oak presence, and solid pale/wheat malt backing against acidity. A really enjoyable offering, and and spot on style example as expected. Not quite as tropically complex on the Brett than others I've had, but extremely well attenuated for the ABV.

500 ml bottle

Pours very slightly hazy apple golden, fizzy white head dissipates to a bit of lacing.

Smells of apple cider vinegar, pear, straw, citrus, barnyard and cereal grains.

Tastes is mildly citrus sweet with a earthy barnyard and cereal malt undertone met with some mild herbal and citrus zest bite. Apple, pear, and white grape in the aftertaste.

Medium body, tingly carbonation on the tongue.

Pretty decent flavorful wild ale with some wine and cider like characteristics. Goes down easily and has no flaws or off-putting characteristics. Tart but not overly so. Refreshing in a springtime way but perhaps a bit heavy. Definitely worth trying and something I could see myself having again.
