truly one of the best beers i have ever had. poured from the bottle in a six ounce glass for a dollar an ounce. incredible product here, like no other i have ever tasted. from my understanding, they use raw maple sap instead of water in this brew, so that in the kettle, it cooks down into maple syrup the way it would in a sugaring house. no way it gets all the way down, but the concentration process definitely starts, and the result is stunning. a deep caramel to mahogany colored brew with not a lot of head, just a short tan khaki film and some spots on the edges. the nose is real sweet, heavy on the maple, like a maple candy but quite so intense. grain is rich and big, but it seems almost secondary to the maple, which is enormous and robust in the aroma, really north woodsy, but there is more to it, a residual freshness and sense of place you so rarely get in beer anymore, and for anyone who has ever set foot in shelburne, vermont, this is it, to a T, with elements of everything that area is historically and culturally and economically and geologically and culturally, and the people there should be awfully darn proud of this. the flavors unfold in a way new to my palate, deep dark amber maple syrup flavors are at the fore, but its still beer down below with something pushing caramel malt and even some grassy german or czech type hops too. the finish is what makes it for me, maple is persistent, but not overly sweet, patiently fermented as a reasonable temperature, but its cut short of dry, and although it finishes quickish, the maple sugars rush back to the tongue after a brief absence of taste or texture. not at all sugary on the teeth, but dynamic and forever. carbonation is still there, and the subtle oak and vanilla and even mellow booze kick from the barrel all layer in accordingly. not too much barrel on it, but enough to add pages to an already wordy yet eloquent novel. if not the very best beer i have ever had, it is really really near to it. unforgettable and a reminder why i do this.
