not sure i would list this one as a wild ale, but its a neat saison, drinkable and summery, with a cool hop profile and a very distinctive yeast profile, that nordic saison strain everyone is trying out these days i think. the beer is very light and pale in the glass, an almost watery yellow shade with a short white head from the tap once it settles a minute. the aroma and flavor are unique, grassy noble type hops, some lime, some apricot preserves, fruity white wine too, a little tang, and an earthy, crackery grain base. its pleasant and defined, very dry and well carbonated, and with some cool spiciness of white pepper, anise, and white tea. i like the hop profile, seems like a mix of strains, and while bitterness is low, aroma and flavor are high, almost as driving as the yeast in this, which is familiar now, but used more subtly here, this is super well refined and professionally done, many beers ive had with this yeast have not been, so the quality overall seems really evident to me in this one. its refreshing for being as nuanced as it is, and very flavorful for being so low alcohol. i really enjoyed this one, and it was a nice way to kick off a pretty epic couple of days of beer drinking back east with family and friends!
