Aged for 1 year in freshly emptied Bourbon barrels. Infinite Wishes, our bourbon barrel-aged imperial stout, is an absolute force of nature, inspiring folks from across the Southland to line up by the hundred. The Raspberry Truffle variant jumps out of the glass with notes of Seas raspberry jelly candy and chocolate. A decadently delicious dessert for anyone who likes to mix fruit with their chocolate.

Near black and opaque body; dense, khaki-colored head, thick and creamy; thin density, patchy fingers of foam cling to the glass. Outstanding blend of chocolate and raspberry notes in the smell; very well-balanced. The taste builds upon the aroma; chocolate and cocoa powder mixed with a great raspberry flavor; lightly tart berry notes; bold bourbon edge; a suggestion of earthy spiciness such as cinnamon. Heavy body; chewy; velvety; fine boozy warmth undercurrent.
Overall, a very nice barrel-aged imperial stout with a nice raspberrry flavored component. The barrel-aging is just a tad overdone and the spices could be a cut back just a bit, yet the beer still exudes depth, complexity, and appeal. I assume the 'truffle' mentioned for this variation refers to a chocolate confectionery as there is no mention of 'fungi' being used in this beer's creation.

Pours black, with caramel colored, one finger head. Aroma is intense raspberries with a whiff of bourbon. Taste is chocolate, raspberry, bourbon and cinnamon. The brew is lighter than expected from the pour and moderately complex, moderately sweet. A large part of the taste does remind one of chocolate truffles. An imperial stout that isn't hiding it's ABV but worth sipping.
