Side Project’s Cory King and the brewers here at SARA chose several strains from East Coast Yeast, in addition to both breweries respective house cultures, and elected to ferment individual barrels with each, with the ultimate goal of blending the entirety into a final, mature, bottle conditioned Saison. The result is wonderfully complex and the perfect illustration of the shared philosophy between both us and Side Project.

Bottle at share. Pours out a pale golden body, mild haziness, small foamy head. Aroma leads with grapes, mixed fruit. taste remains fruity while adding the yeast and assoiated funk. Not too tart, velvety.

a clever beer here, done with side project, a blend of barrel aged saisons done with each of their house cultures, which is a really cool idea. i am quite familiar with side project wild beer by now, and i get a lot of that in this, the high level but clean bright acidity, slight fruit vinegar, and supporting funky brett. i am a little less familiar with the wild beers of sante adairius, having only had a handful or so of them, but i can appreciate a much more complex and mature brett profile from that side of the blend than i really ever get in side project beers, a nice balance to all the acid, and all of it so cohesive, with the wood on it, a white wine and peach juice complexion, and effervescent carbonation. its really nice beer, totally yeast driven, but also really drinkable for being so layered. lots of musty and danky brett elements here, lemons and oranges and even kumquats in the acidity, and with a soft botanical thing at the end too. special beer, of incredibly high quality and from two of the best getting together. id love to sit down with this one again, lots of nuance to appreciate. this is exactly the kind of beer i am into right now, no fruit needed!
