This mixed culture saison was foudre fermented and then aged in wine barrels, before being heavily dry hopped with Amarillo, Mosaic, and Citra. Notes of kiwi, melon, underripe peach, lime, grapefruit zest, lemon meringue, and tender woodiness of orange inner-tree bark, supported by a traditional, funky barrel aged saison backbone.

One of the best Saison beers I have ever had, but it was not available on tap at the brewery. We bought a cold one there and poured it out in the supplied glasses. The look, smell. taste and feel all exceeded expectation. This would be my number one beer if it was too pricey, but it is, I think it was over $20 for 750ml. Anyway, this Saison was fermented in a foudre and finished in wine barrels with the brewery's house saison yeast and various strains of Brettanomyces. Man, can you taste it!!!! It is most definitely heavily dry hopped with Azacca, Citra, and Amarillo, which I just loved. The brewery claims notes of kiwi, honeydew melon, white peach, dragon fruit, pineapple, citrus zest, and under ripe strawberries, with a funky, refreshing finish, which I agree with, but I didn't taste any dragon fruit or pineapple, rather, I tasted distinct citrus zest and white peach most predominately. \m/
