Saison fermented in a foudre with our house saison yeast and Brettanomyces, then aged in barrels with locally gathered wild pawpaws (the only fruit native to PA). Notes of white grape, pineapple, plantain, and a woody, earthy, refreshing funk.

Okay, I am from Pennsylvania and I never heard of pawpaws. In any event, I am enjoying this beer!
Poured from a bottle into a tulip glass. Bright cloudy yellow color with decent initial whihead with little lacing. Citrus smell and taste. Lemon and lime flavors. Tart white wine and oak. Refreshing beer with tropical flavors. Enjoying it very much with dinner.

Poured from a corked bottle into a Dogfish Head tulip. 2017 vintage
L: Nearly clear golden pour with thick foamy white head.
S: Tart and fruity. Pineapple and juice.
T.F: Tart up front without being overly sour. Unripened fruit and pineapple. White wine, oak, peach, and pear. Slightly funky. Medium to light bodied... well carbonated. More fruit and pineapple at the finish.
O: An outstanding tart/fruity saison. Great flavor and easy drinking.
