Barrel Aged Saison with Sumac. This mixed culture saison was foudre fermented and aged in a single wine barrel, before being transferred to stainless and spending roughly six months with hand-picked staghorn sumac foraged from rural Bucks County in August of 2020. The final result pours a unique pastel shade and presents refreshing notes of raspberry lemonade, watermelon rind, and strawberry, with a dry, rustiq finish.

On tap at the brewery.
A - Medium golden bronze color with no lacing and no carbonation.
S - Lots of wet tartness on the nose.
T - Tart puckering from start to finish, with puckering white grape and sumac in the back ground. Puckering is moderate but not heavy.
M - Thick and silky with no carbonation and leaves the mouth watering.
O - Not really my gig. Like the tartness, but not the beer so much.
