JANUARY 2026.

Brewed with Centennial and Simcoe hops and spruce needles.
1 Pint Can (47.3 cl) - Packaging Date: October 29, 2025.

Herbaceous notes on the nose (I would have said—without knowing it—attributable to Centennial hops) and subtle malty hints.
Poured vertically, it is deep blond in color and produces a moderate head that almost disappears on its own, except for a light surface layer.
Very clean, almost completely transparent.
Medium body, very low carbonation.
Pleasantly herbaceous flavor, with fresh woodsy notes (berries, pine needles) and hops that are not overly aromatic, but rather herbaceous and bitter. The finish is dry, with a slight bitterness that leaves pleasant pine needle notes on the palate (and you obviously have them).
A quick, refreshing, satisfying drink, straightforward and without frills, yet without any excess: spectacular balance.
The malty notes that were noticeable on the nose are barely perceptible on the lips, and as soon as the beer warms a little in the glass, slightly honeyed notes emerge, but overall, they don't affect the main woody and herbaceous flavor that characterizes the entire beer.
In excellent form, it fills the palate for a moment, then dries out into a restrained bitterness, yet with clearly discernible woody notes.

December 2022. Athens. Did not have the significant pine taste I expected. Actually a little sour tasting and kind of watery. I would pass on drinking this one again.

L - clear as day, not a ton of fizz, but good lacing.
S - Not sure I get a ton of spruce on the nose, but some dank-cat-pee-forest-blueberry-lemony aromas do emerge. Dank as it warms.
T - More of the dank, catty, some pine but there is a touch of blueberry in this that's pretty good. Solid.
F - Nothing over the top, but balanced, not boozy, a little bummed there's not more spruce action (?) if that's what they're labeling this.
O - A solid beer, clear, well made, just not very spruce-like if that's what they're going for in the name.

16 ounce can into a tulip snifter. Canned 12/2/20, had 12/22/20.

Pours a bright, pale golden yellow, clear, with a one and a half inch foamy head with a decent amount of foamy lacing. Aromas of citrus, malt, light pine, light spruce, a little dank aroma as it warms. Flavors of citrus- especially orange and grapefruit, pine, light spruce. Tastes dank as it warms, a good amount of hop bitterness on the finish that lingers. Smooth, a very good lighter body, well carbonated.

A good IPA, but needs more spruce tips if they’re going to use spruce tips. Enjoyable.

Appropriate can art - deep forest green back drop with svelte Unicorn posed in front of a copse of spruce trees.
Bright, clear, pale golden color with a firm, dense head of white foam. Smears and spatters of lace all around, slow streams of little tiny bubbles supports a persistent film on top the liquid.
Aroma is all citrus and evergreen needle juice, some leather and sage mix in.
The flavor is sharp and the body thin from the start. Very little malt character or sweetness, this is all about the spruce. Other flavors seem stripped away leaving a kind of unique but one note conifer showcase.
Dry and watery, seemingly highly attenuated, this beer offers little in terms of complexity or malt - hop interplay. It's thin and spruce/hoppy, with a faintly dry finish.
It's not bad, but still, uninteresting though this might be more enjoyable on a hot June day rather than a drizzely January evening as long as you're not expecting much.
It seems this brewery makes great beer, I guess I just picked the wrong Unicorn.

Tasted in a Spiegelau IPA glass from a one pint can on December 25, 2019. India Pale Ale brewed with Centennial and Simcoe hops and spruce tips. Juicy with a nice piney finish.
