Collaboration with Right Bee Cider in Chicago, IL. Sour ale brewed with apples. Sometimes you go to your neighbors for a cup of sugar, and sometimes you go to them for gallons and gallons of gorgeous ripe apple juice and make a collaboration beer that walks the line between a cider and a beer. Sometimes.

We brewed this beer at Pipeworks in collaboration with our fellow Hermosa neighborhood fermenters at Right Bee Cider. Together we chose a clean pale malt base, soured the wort in our brew kettle for a subtle tang, and then, after primary fermentation added gallons the beautiful apple juice that Right Bee uses to make their cider! The result is a beverage that's definitely a beer, but is crisp and refreshing with a lively effervescence. It may just be the best of fall.
