wood fermented wild beer with muscat in collaboration with the highly acclaimed ale apothecary, cool that these two got together for a beer like this, it seems like equal parts both operations from what i know about each, and i like seeing both identities come out in a collab like this! its gorgeous beer, glowing golden yellow in the glass with a soft frosted haze to it and several inches of rising and expanding creamy white head, downright beautiful really, with little bubbles floating slowly up to the surface. it smells fantastic. usually muscat grapes arent my favorite in beer because they tend to run both sweet and overly fragrant, perfumy even, so i had a little skepticism, but here these grapes seem perfect. a bright acidity to them, almost like chardonnay here, drier than i normally know them to be, but still so distinctive to my smell. lots of oak, some wine tannins, light citrusy hops, and a mango or pineapple fruitiness as well. the yeast is amazing, bretty for sure but with some obvious tartness too, complex and mature and compelling, more unique and refined than i have known independently from either brewery. i love it. all of this is there in the flavor too, green pear and pineapple from the grape, rich white wine but not dessert or ice wine from the muscat grapes, still retaining their real identity, just in a more reserved, integrated, and to me agreeable way, fresh oak and vanilla but super light and dry in feel, and then the yeast, which is bretty and funky, super mature, champagne, wet lawn, and tannic wheat, this is incredible stuff. effervescent and layered and dry and then gone, like a grand finale in the mouth. such a complete and delicious beer, among my favorite from either brewery on their own!
