a very unique hazy ipa here, done with kveik yeast, but not as estery and saison-esque as i have known it to be in other beers that employ it, possibly fermented much cooler than is common, and with a very distinctive hop profile, almost like one varietal from each point on the spectrum, barbe rouge giving it a notable berry complexion, mosaic in its classic new world tropical juicy dry hop capacity, and the cascade there on the back end bittering it up some, making it drink like an ipa, and adding a vegetal spice layer that seems to make the rest of the hops pop in here, a really thoughtful recipe and a cool mix of flavors not often seen together. this would be flavorful and compelling i reckon even without the special yeast, but that element adds a lot too, like it seems to create additional fruit and botanical layers and linkages between the hops in a way that say a french saison strain rarely does, and it doesnt interfere with this still being very much an ipa. there is an ever so slight tart thing in here, a big smooth almost creamy feeling body from the starchy grains, but nice dryness and carbonation to keep it from being heavy, even when it warms up some. the hops linger on the tongue for ages, even long enough to interact with my next beer here, but i love the taste, and i am stoked on this barbe rouge varietal specifically, which these guys were using well in at least two beers when i was in. i thought this was great, more nuanced and complex than almost all of the hazy ipa ive had to date. yum!
