A very pretty beer...great golden color. Classic saison smell with a bunch of pepper developing as it warms. Wow...that is to much pepper to make it a pleasure to drink for me. Would be really good with some strong cheese and bread. To strong of a peppery taste to drink by itself.

Bottled April 2015. Pours a very cloudy golden color with a finger width foamy head. Head retention is good and is lacing. Aroma is more like a Belgian Trippel with peppery beef jerky. Very peppery taste. Still reminds me of beef jerky. Definite Belgian yeast. Some farmhouse component, but still reminds me a lot of a Trippel. Medium to heavy bodied with moderate carbonation. Alcohol burn after drinking. I would probably like this beer a little more if it wasn't so peppery at the end.

Banana saison, no thanks. I can take some in a hefe, but not a saison.

A: Pours a hazed golden/orange color. A two finger white head is slow to rise, and recedes in a minute. Light lace is left behind.
S: Earthy, lightly peppery, and some fruity esters up front. A biscuit malt, cracker like aroma in the finish. Very nice.
T: At first the peppercorns are subtle, but eventually take over a bit to much for me. Though still really enjoyable. Earthy and ester like yeast. Some citrus, orange peal. Crackers, and biscuit malts. Very nice.
M/D: A medium body that is perfectly effervescent. Crisp, clean, and finishes really dry. I wish the alcohol was not so big, and tone down the peppercorns a little, but still really enjoyable to drink. Especially with some food. Like a good pasta or strong cheese.
Without a doubt my favorite release from Buffalo Bayou. I am not usually a fan of a flavored/spiced saison like this. I like the yeast to be shine, but this does a good job of straddling that fence between balance, though almost overdoing it. I will be getting more. Well done.
