Ancestral is out Summer Saison brewed with heaps of what and hopped with Simcoe. Fermented and conditioned in large oak tanks for one month prior to tapping. Our "house" character is really turning into something beautiful.

Vibrant yellow color with two fingers of white head. Tart aroma with hay and coriander up front and pear, apple and pepper in the background. Medium bodied with good carbonation. Slightly sweet, slightly peppery taste with many of the same flavors as the aroma and mineral-water in the aftertaste. A solid saison, crisper than many of their others.

Sorry, gang...but I just don't get this one. Too malty for my taste, and otherwise just meh...
