A Mixed Substrate Grisette brewed with wheat and spelt. Fermented with our Emptiness culture in our futuristic concrete egg as well as our large Vin Santo cask. Bright and Springy.

Picked up a 32-oz growler at Fermentaria yesterday 6/18/16. Pours a golden hay-like color with fluffy white head and some decent lacing. Smells of funky brett. Wheat and hay-like with a hint of tart funk. Tastes minimally tart with wheat & spelt grains. Brett funk exists throughout. Feels light & spritzy, great thirst quencher on a warm summer day. Overall, an interesting beer, probably under appreciated I'll bet. Reminds me of a 100% Brett Brux fermented beer I brewed based off Chad Yakobson's farmhouse saison recipe found in Zymurgy a few years ago.
