A red Saison/Flemish-Style Red blended from a variety of small-format oak barrels. Deriving character over the course of one year from the oak itself, and from its resident microflora. Bottle conditioned for an additional year. Sanguine demonstrates the profound effects of time.

Poured from a bomber into a Dogfish Head tulip
L: Cloudy dark brown pour with big fizzy white head. Falls fast... great lacing.
S: Tart and acidic. Dark fruit, grains, and spice.
T.F: Just like it smells. Tart bordering on sour... strong dark fruit with cherry and plum. Spice and oak... earthy with a bit of barnyard and red wine. Moderate acidity... pomegranate vinegar and lemon rind. Well carbonated... medium bodied with a dry finish.
O: I agree with the reviewer below that this drinks much more like a Flanders Red than a saison. Nice flavor/complexity... very enjoyable brew . Tart, funky, and refreshing.

Sample at Mikkeller Beer Celebration Copenhagen 2017, blue session. Clear brown color with tan head. Aroma has funky farmhouse and barnyard notes. Taste is sour with roasted malt, burnt sugar and some acidic notes.

Bottle.
Dark chestnut brown pour, with a solid eggshell head. Nutty malts, earthy oak, red wine, mineral, hearty cherry sourness. Closer to a Flanders red than anything. Pretty heavy drinker, but good for a long session.
