Hoppy Saison brewed with wheat. Fermented with our magickal saison culture and aggressively dry-hopped with Mosaic, and Citra. It's all relative, time is unreal.

a hoppy saison and a darn good one, perhaps my favorite beer i had here at tired hands, it was certainly one of them. i love their yeast culture they use for the saisons here, and its so nice in a light malt base like this, really subtly funky, a little tang, and a rustic old world bready thing that is almost sourdoughy and awesome with a pale malt base like this, wheat and pils types i would think. the hops here though are what make this special. there is a synergy with these tropical new school hops that is more unique than mosaic and citra (which are now everywhere together) normally seem to add. not quite bretty in the nose, but there is a dry fruitiness to the yeast that seems to bring out the citrus in the hops, none of the cat pee mosaic thing at all, a cleaner, less oily or rich, citrusy and melon profile, a touch of honey, really well dosed too, they dont take over the lighter malt flavor either. i find this pretty rustic and old worldy, something we might get from belgium, save for the hop types, but this isnt about being juicy and dank, its an exercise in subtlety, hoppy as it is, there is a refined balance to this that is leagues ahead of most hop forward saison types made in the states, and a very special beer overall. this is the style these guys do best in my experience, and i loved this thing! dry and well carbonated, super light on the palate, springy and refreshing. outstanding saison!
