Saison brewed with wheat, lime purée, and a touch of kosher salt. Fermented in our open top fermenters then conditioned in stainless steel.

On tap at brewery:
First off this is a hybrid saison/wild ale, with fruit added.
For what it is, I truly enjoyed it. There is a slight dirty look to the wet hay body. Head isn't huge, but lasts with some lacing.
Nose is a bit pickle-like. Given the citrus and salt additions and the open fermentation, this isn't out of bounds, though it was a small surprise. Lime, light vinegar, salt, and maybe a little of the wheat malt come out.
Taste thankfully isn't pickly. It's a lightly funked Gose, in a way. There's a little more, well... funk, than a Gose and it is missing that earthiness from the coriander. Tingling tart and carbonation lends to a nice feel.
One of those oddities that works for me.
