Tom’s Hands is Monk's Café's Twenty Year Anniversary Cuvée. The many threads that make up this blend are, on average, two years old and have fermented and then rested in white wine puncheons with a blend of our house microflora. The youngest, and smallest, thread is only one year old and has been conditioned atop roughly four pounds of peaches per gallon. The resulting blend is thoughtful and pungent, bright and refreshing.

2017 bottling. Poured from a corked bomber into a Dogfish Head tulip
L: Nearly clear light golden pour with thin fizzy white head. Falls fast... with modest lacing. Some sediment at the end of the pour.
S: Tart and acidic. Fruit and oak.
T.F: Tart fruit and grains to start. Biscuits and lemongrass. Peach, white wine, apple-skins, and oak... a bit of spice and funk. Moderate acidity. Light and crisp with bubbly champagne-ish carbonation. Lingering tartness and fruit to finish.
O: A beautiful fruity and tart saison. It picks up the white wine barrel/oak and the flavors work great together.

Truly excellent beer that pours light golden color with a white head. Tastes just the right amount of sour with peach, lemon, oak flavors. Light bodied and very solid.

Extremely light, pale yellow body with a soapy white head. Aromas of peach, oak, funk. Medium high acetic character. Tart and funky with long lingering flavor. Very nice.
