This Saison features local buckwheat from Deer Creek Malthouse. This Saison was primary fermented with our Magickal Saison yeast in a new French oak foudre the innoculated with Side Project’s mixed culture and aged for six months.

really amazing little series of beers between two of the best in the business, especially in these styles. this is mature, funky, interesting, and perfect for fruit additions, but i really liked the base beer on its own too, something still quite striking and distinctive, and something i wish i had access to on a regular bases, big thanks to my brother for sharing these rarities! it pours a pale rust color, not quite clear, with a tall and airy white head on it. the buckwheat in the mash is immediately obvious, it has a little rye-like earthy spiciness to it, and when combined with the other malts in here, helps create a unique base for all the wood and funk, seems more extended, more nuanced, and more complete than a lot of wild saison types, and its flavor is a perfect fit, very rustic to me. i was worried the side project yeast would take over and make this too sour, which has kind of been the case with all the recent beers of theirs i have had, everything has become so sour out of there, but its held in check here somehow, there is some pucker, but its at least as wild and farmy as it is acidic, and we have no problem drinking this without any harshness on the teeth or in the belly. the brett part is amazing, mixed and mature, with herbal notes like bee balm and honeysuckle, and maybe some aged hops too, real low alpha but some flavor remains. lots of oak too, some tannins, vanilla, white wine, peach notes too. its super complex, and i love the buckwheat in it, its accounts for a lot of what makes this different. of course the blending of cultures between these two great breweries is what its all about. way more than just a base beer, and as impressed as i was with the fruited versions, this is pretty special on its own. a wonderful collaboration, and a pleasure to drink with my brother!

Poured from a corked bomber into a Dogfish Head tulip
L: Cloudy golden pour with 2 fingers of foamy white head. Sticks around for awhile... nice lacing.
S: Tart and lemony. Green fruit and vinegar.
T.F: Tart and acidic... gets the salivary glands involved right off the bat. Lemon citrus, green apple, cider vinegar, pear, and funk. Oak, barnyard, and wheat. Some fruit sweetness makes it through mid swig. Sticky on the tongue and with creamy carbonation. Complex... and surprisingly delicate despite its sour pop. More acidity and unripened fruit at the finish.
O: Complex, very tart, and quite tasty. This is a style that Tired Hands really nails and this one was a treat.

S- Tart, lemons, pears, wheat, oak, nice mild funk, hints of peach skins.
T- Sour, lemons, pears, some wheat, oak, some earthy funk.
M- Smooth, light body, soft.
O- This is a beautiful sour, tastes much more like a Wild Ale than a Saison. The balance, softness and bright flavors make this a really nice treat
