Poured from a corked bomber into a Dogfish Head tulip
L: Slightly cloudy golden pour with 2 fingers of foamy white head. Nice ring of sticky lacing.
S: Jam and peaches. Funk and fruit.
T.F: Tart but not sour... super jammy. Peach, stone fruit, and light lemon. Funk and oak... white wine and more peach preserves. Medium to light bodied. Modest acidity.
O: Absolutely fantastic saison... the peach is perfect and melds perfectly with the beer. Elite.

the peach edition of this special collaboration was also money, not quite as striking as the plum for me, but still just wonderful beer, a gorgeous expression of the peach. enormous thanks to my brother for hooking these up, super fun to drink these together! this one took awhile to open up, and ends up a little more sour and acidic than the base and the plum that we also had in this same session. more of the side project sour culture seems to be on display here, puckery and lemony, but also quite clean. a less of the wood as a vehicle for wild funkiness going on here, but i think that works to accentuate the peach in a cool way. i actually didnt get a ton of peach on the nose or in the taste at first, it took a few minutes of letting this breathe for it to really come out. when it does, its about as authentic as the plum, which is to say incredibly so, ripe and juicy and real, super summery to me, and the climax is late, even after the swallow, pushed on by more carbonation than it seemed like either of the other two had at the end, super bright, skin and flesh and juice, some bretty farmy yeastiness there too, minerals, citrus notes, cut flowers, simple malt, i taste less of the buckwheat in this one, and just a bit of hanging on fruit sugar from all the peach in here. maybe a touch less complex and lambic-esque than the plum one, which must have had some additional fermenting agents on the fruit getting to work, the fermentation profile here is quite different really. a shining beer on the palate, very drinkable even being this sour, and with the absolute essence of the peach driving it with the yeast. a magical series of beers from two of the very best! unforgettable.

Phenomenally crisp and clean on the palate, bracing, good acidity but not over the top, peach melds with other flavor elements well without dominating. Doesn’t scream fruit beer. Substantial funky horse notes in the nose and nearly as many in the taste. Complex and musty. Really impressive!
