Our simple and elegant spelt Saison. Primary fermented in a large oak foudre with our Magickal Saison yeast and slowly refermented in the bottle for natural carbonation. Brewed in February 2018. Bottled in August of 2018. Notes of Sylvaner grapes, lemon skin, fresh Spring linens, and watermelon/strawberry sour candies. Lovely.

Poured from a corked bomber into a Dogfish Head tulip
L: Nearly clear light golden pour with thick foamy white head. Great lacing.
S: Tart and acidic. Oak, unripened fruit, and funk.
T.F: Just like it smells. Tart with a bit of funk. Mild acidity... lemon rind and green apple. White grape, oak, and pear. Green fruits and mild yeast. Light bodied with bright carbonation.
O: A typical 'Tired Hands' saison and that is far from a criticism. Without doing a side by side I'm not sure this is a huge departure from Ourison, but it's still tart, delicious, and easy drinking. These guys kill this style.
