Brewed in July of 2018 as a simple Saison with a sturdy backbone of both spelt and under-modified two row barley. It was fermented primarily in one of our large French oak foudres with our Magickal Saison yeast blend. After roughly six months, we transferred this austere number to a tank containing heavy amount of fresh pressed New York State raspberries for and additional fermentation which lasted roughly three months. Bottled in September of 2018 and conditioned until its release. Striking and intense with an almost blown-out, jammy-enough, fresh raspberry presence. Notes of Mommom’s raspberry pie, lemon sorbetto, cucumber, cranberry cordials, and candied hibiscus. Incredibly bright & jammy with a pleasing natural acidity.

Poured from a corked bomber into a Dogfish Head tulip
L: Nearly clear medium raspberry/maroon pour. Darker on the 2nd pour with a bit of sediment. Thick foamy white head leaves great lacing.
S: Fruit and raspberry with a bit of funk.
T.F: Tart and fruity. Strong raspberry... lighter lemon citrus and white wine. Oak... green fruit and funk. Flowers and jam with a bit of spice. Medium to light bodied... well carbonated. Sticky on the tongue. Lingering raspberry preserves at the finish.
O: I'm biased as I love Tired Hands and especially their 'Frequency Illusion' series but this is an outstanding beer. Absolutely delicious.
