An Ancestral Saison in collaboration with our friends at Heirloom Rustic Ales. We brewed a simple recipe of Spelt and Pilsner malt, and split the batch between two Hungarian oak Chardonnay puncheons. One puncheon fermented with our Magickal Saison yeast, the other with our house Lager strain. The two were blended just prior to bottling, and the carbonation was derived entirely from the resulting secondary fermentation.

An overlooked bottle purchased in 2019 and left in the wine cellar. Pours an amber orange with haze. Tart and tasty, though one wonders what it was like when newly bottled.

Poured from a bomber into a Dogfish Head tulip.
L: Nearly clear golden pour with big fluffy white head. Outstanding lacing.
S: Tart and funky... green fruit and spice.
T.F: Tart up front... funk and barnyard. Green/unripened fruit, lemon, grass, green apple, and oak. Picking up a little of the white wine barrel. Some spice and more funk. Relatively light bodied... tangy and well carbonated. More unripened stone fruit at the finish.
O: A complex and delicious Oaked Saison. Similar yet different from other Tired Hands offerings, and this is a style they've really mastered. Great stuff.
