An adaptation of our house four grain Saison, Ourison, which is brewed with barley, oats, wheat, and rye, and lightly hopped with US varietals. After primary fermentation in a large oak foudre with our Magickal Saison yeast, this beer was secondarily fermented on Cherries while our house cultures worked their magic. Referermented in the bottle for natural carbonation.

Poured from a corked bomber into a Dogfish Head tulip
L: Slightly cloudy burgundy pour. Thin fizzy pink-tinged head. Falls fast... negligible lacing.
S: Tart and fruity. Cherry, oak, and a bit of funk.
T.F: A bit of unexpected cherry sweetness up front. Tart but not sour. Some funk.. great oak and baking cherry. Lighter lemon citrus and apple. Some wheat/grain and more cherry. Complex... light bodied with fizzy carbonation.
O: A delicious tart saison that really delivers the cherries. Fantastic stuff, and a nice riff on the regular Ourison.

S- Tart, cherries, some band-aids, oak, lemons, some leather, mild funk.
T- Tart, juicy cherries, leather, hay, some lemons, oak, hints of wheat, some funk.
M- Smooth, light to medium body.
O- I like Freedom From The Known better than this. Not a bad take on Ourison but not necessarily an improvement on the base beer.
