While other variants were in the BA database, the original Guillemot was not. This bottle was brewed in January 2018 and barrel-aged for nearly a year in French. Bottled in November 2018 and refermented in the bottle. A very dark and tart saison that is delicious in April 2024 after cellaring for over five years.
