We're setting the tone for our 2019 brewing year by getting out of our comfort zone. Tor' Up! is brewed with Torulaspora Delbrueckii, a yeast that is only recently beginning to find traction in the brewing world. We taste sweet notes of honey and caramel with a surprisingly thick mouthfeel for its low alcohol content. Notes of concord grapes and black currant dominate the aroma.

look is hazy yellow. Smell is yeasty. Taste follows nose and winey bite. Feel is light. Overall, it says ale on can. Not really an ale. Too much of a wine taste for me. Glad they just did this once.

Can't tell the can code date
Decent foamy bubbly smaller head, decent retention little lacing, crystal clear light pale color
Nose is interesting, fruity but can't label the fruits, honey, cracker, gristy malt, saison like mild phenols and fruit esters,
Taste is fairly sweet, some fruity esters, more saison like flavours with a little phenol peppery notes, honey and honey cracker, gristy malt, bread dough, floral yeast and floral hops, little fruity earthy hop, medium light bitterness, drier but semi sweet finish
Mouth is med to lighter bod but sweet sticky, medium light carb
Overall an interesting fun beer, unique and quite saison like

Pint can, Hazy lemon with a finger head. Smell is a nice blend of cracker and pineapple. Taste matches the aroma, a wild blend of cracker and tart brew. Feel is a moderate body with some bite of carbonation. Overall, this is a good beer and an interesting exploration of a yeast variation.

Reasonably priced 4-pack of a brew made locally with a strange new yeast... sign me up every single day.
A- Tallboy pours into a tulip with a cloudy light yellow body and a thick white crown. The head has a stable, puffy consistency peaking at about an inch high. Really nice head retention. Lacing is a mix of small spots and a few wide, thin sheets.
S- The T. delbrueckii feels in the aroma comes of like a hybrid between a Saison and witbier yeast with added tart fruitiness in the backdrop of the pale fruits and spiciness. Pear, vanilla sweets, peppercorn, slight banana, white grapes, coriander and a touch of apricot and tart fruits. A touch of bready and pale grain hints from the malts but the yeast is the star in the aroma.
T- Compared to the aroma things hold up mostly, with a few small changes specific to the taste buds concerning more sweetness and spiciness from the yeast. The sweetness that was suggested in the aroma acts to balance things out and the spicy, on the Saison side of things, notes pick up in strength with more coriander, white pepper, clove and even slight cardamom coming to mind. The Belgian yeast also drops hints of cooking herbs, slightly tart white grapes, currant, apricot, banana, vanilla sweets (similar to a Hefe), sweet pears and citrus peel. Again, comes together like a Saison and a Wit retaining a bit more sweetness. Grains round it all out with cereal, cracker, bready and pale barley hints. Honey and lemon also in there.
MF- Perhaps the biggest difference from the aforementioned styles is the body. The body has a heft to it and overall is medium thickness with a silky and almost chewy creaminess. Ends with a spicy bitterness.
For the people left in the world who purchase beers beyond IPAs and sweet stouts this one is extremely interesting. Anyone who appreciates something like Allagash White or a great Hefe or even the fruitier Saisons you will find joy here. The flavor profile is incredibly well balanced and despite the similarities to the styles mentioned above, the beer seems to have more depth to its fruity flavors from the ferment. Hopefully more experimentation like this in the future.
